Abstract: The goal of this research project is to synthesize a betanin analog, a dye that is responsible for the deep red color in beets, to better help our investigation of how the electrophilic π highway of betanin might be attacked by nucleophiles. The investigation would also reveal the limitations of betanin as a natural food dye. We have previously explored a multistep synthesis utilizing a semicarbizone Wittig reagent that reacts with a piperidone. In this study, we explore the reaction of the piperidone with a new Wittig precursor suggested in work by Tobias Rein. This synthesis utilizes an aldehyde Wittig reagent which is converted to a cyclohexane imine before the condensation reaction with the piperidone.
